How to Make Whole Wheat Banana Oatmeal Muffins with Applesauce

To make these delicious healthy muffins you will need:

  • 2 mashed, over-ripe bananas
  • 5 cups of whole wheat flour
  • ½ cup applesauce (unsweetened)
  • ½ cup of brown sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla bean paste (vanilla extract will work too)
  • ½ teaspoon of salt
  • ½ teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/3 cup vegetable oil
  • ¼ cup of oatmeal

You will also need:

  • Muffin pan
  • Muffin cases
  • Mixing bowls
  • Whisk

Instructions

  1. Start by preheating the oven to 200⁰
  2. Line muffin tin with muffin cases ready filling.
  3. Mix together the flour, baking soda, baking powder, cinnamon, sugar, oatmeal, and salt.
  4. Separately, mix the mashed banana, applesauce, and oil
  5. Add the dry mixture to the wet mixture, adding a bit at a time,
  6. Mix well until smooth.
  7. Pour the batter into the muffin cases until ¾ full
  8. Sprinkle some oats on top of each muffin before baking – this will give them a delicious, oat-y, crunchy topping!
  9. Bake for 15 – 20 minutes.
